Pumpkin Corn Chowder
A hearty harvest soup, complexly delicious. Great crockpot option.
- 16 ozs Pumpkin puree or canned
- 1 cup corn kernels
- 1 tbsp butter, unsalted
- 2 Garlic cloves, pressed
- 1 Onion, sweet
- 1 cup Red bell pepper
- 2 Celery stalks
- 1 Sweet potatoe
- 4 cups Chicken stock
- 1 tsp Poultry seasoning
- 2 ozs Feta cheese
Prep: Chop onion, bell pepper, and celery. Dice potato.
Sautee vegetables: Melt butter in saucepan. Add onion and pressed garlic, sautee until soft, appx. 4 minutes. Add celery, bell pepper, and potato. Cook 4 minutes.
Crockpot: To the crockpot, add the sauteed vegetables, chicken stock, pumpkin, corn, pultry seasoning, and salt+pepper to taste. Cover and simmer (use crockpot controls to align with meal time, slower/longer/lower temp ideal).
Serve with crumbled feta on top! Enjoy!
