Apple, Browned Pecans, Goat Cheese, Romaine all in a Fig Mustard dressing.

Ingredients
  • 1 Red apple (crisp varietal)
  • 2 Romaine lettuce hearts
  • 2 ozs Goat cheese
  • 2 ozs Unsalted butter
  • 2 tbsps Dried tart cherries
  • 2 tbsps Dijon mustard
  • 2 tbsps Fig butter
  • 2 tbsps Red wine vinegar
  • 1 cup Pecans
Directions

Prep:  Core then thin slice the apple.  Chop the Romaine.

Brown the pecans:  Melt butter on med high, add pecans, stirring constantly for 2-3 mins until toasted, fragrant.  Transfer to a bowl, quickly sprinkle with sea salt to taste.

Make the dressing:  In a large bowl, mix the fig butter, red wine vinegar, and dijon mustard.

Combine:  Add the chopped lettuce, apple, and cherries to the dressing bowl.  Toss.  Salt and pepper to taste.

Enjoy with a Sauvignon Blanc!
